  1. Peel and roughly chop the avocado and banana and put in a blender or smoothie maker (or use a steady bowl and hand stick blender) along with lime juice, mint/basil and non-dairy milk or apple juice.
  2. Blend until smooth; taste and add a little agave nectar if you want it sweeter, stir and pour into a bowl.
  3. Drop spoonfuls of soya yoghurt around top of smoothie.
  4. Chop fruit and nuts and add to the bowl with a sprinkling of seeds.
  5. Drizzle with agave nectar to taste and enjoy!

  1. If you don't have a blender you could mash the smoothie mix with a fork and finely chop the herbs.
  2. Herbs aren't essential but taste delicious and fresh lemon or lime is best but squeezy/bottled is fine too.
  3. If you're not Vegan, you could of course, replace non-dairy milk and soya yoghurt with dairy and agave nectar with honey.
  4. Toppings can be anything you like depending on what you have in!  Cacao nibs, raspberry coulis and chocolate/flavoured syrups are yummy too.
